Woodfire Grilled Salmon & Lemon Dill Sauce with Penne

Wood-fire Grilled Salmon & Lemon Dill Sauce with Penne 
2 Salmon Steaks
1/4 cup olive oil
1 T. apple-wood smoked salt coarse ground
1 teaspoon fresh cracked pepper
Season salmon fillets with smoked salt and fresh cracked pepper.
Preheat grill for medium heat.  I realize most people don't cook with wood so a gas grill would be perfect.  If using charcoal make sure it is not cheap since this is the flavor of the entire dish.
Optional: use smoked salmon instead of fresh 
Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.  Serve salmon placed on top of cooked penne.  Pour sauce directly over salmon and pasta.  Garnish with chopped scallion and fresh grated pecorino or parmesan cheese.
SAUCE:
3 tablespoons sweet butter
2 tablespoons olive oil
2 garlic cloves, minced
1 tablespoon shallots, minced
1/4 cup red bell pepper, minced
1 teaspoon chopped fresh dill
1 tablespoon lemon juice
2 cups heavy cream
1/4 teaspoon white pepper
1/4 cup grated parmesan cheese
1 (12 ounce) penne pasta
Directions:
-Melt butter in medium saucepan with olive oil over medium/low heat.  Add the lemon juice, dill, red bell pepper, shallot, garlic, cream, white pepper and bring mixture to a simmer.  Stir often.  Add the Parmesan cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth.
STIR FREQUENTLY.
While the sauce cooks, boil noodles for 5-10 minutes.
