St. Paddy's Irish Delictables

Corned Beef & Cabbage  1-6 pound beef brisket (You can buy brined beef brisket in any deli near the deli meat section, which comes with a seasoning packet) 1 tsp. whole peppercorns 2 bay leaves 1-3 heads of fresh cabbage 5-12 baby red potatoes, the smaller the better 1 lb. bag of carrots, peeled and cubed 1 tsp. parsley 1 stick salted butter 1 tsp. minced garlic 1 medium sweet onion, diced 1 small jar ‘heavy duty’ coarse mustard 1-2 bottles Harp or Guinness I cup malt vinegar Optional: 1/2 T. whole allspice, 1/2 T. dill seed, 1 T. coriander seed, 1 tsp. mustard seed. In large stock pot add all ingredients except cabbage.  Add enough water to barely cover beef and vegetables.  Cover pot and bring to a boil over medium heat.  Simmer until meat is tender when pierced, 2 1/2 to 3 hours.
